With summer comes strawberries! And one of my favorite ways to enjoy strawberries is with strawberry shortcake. When I have strawberry shortcake I don't like the biscuit-type cakes...I like a nice spongy cake to soak up the juices. I searched for a sponge cake recipe earlier this month...and found this one on Cooks.com. It is so yummy...I eat it just by itself!! And even better it is super simple and made with ingredients that you always have on hand.
1 cup sugar
4 Tbsp. water
1 cup flour
1 level teaspoon baking powder
1 teaspoon flavoring extract (I use vanilla)
First, break the eggs into a medium sized bowl.
Beat them for 1 minute at half speed.
Add sugar. Beat for 5 minutes until it thickens and is lemon colored.
Add water. Beat for another minute.
Sift together the flour and baking powder. (I just whisk it really well).
Stir the flour mixture into the wet ingredients. Do not overmix or the cake will be tough.
Add the flavoring and pour into a shallow baking pan. I used an 8 inch cake pan. I sprayed it with cooking spray. Bake at 400 for 5 minutes...then decrease the temperature to 375 and cook for 20 minutes more.
Yummy Strawberry Shortcake. And if you don't have any strawberries...yummy cake!!
