When I have a chocolate craving, but want something a little more healthy (I did say a LITTLE), I make applesauce brownies. I first found the recipe for these when I was still at home and a bunch of those recipe cards came in the mail (you know the ones - where they want you to complete the set by buying more). I made them and loved them. The taste is different than a typical brownie. Well, over the years I lost my recipe for them. I searched online and found this recipe . . . which is exactly what I remember!!
Ingredients:
7 T. flour
1/2 cup cocoa
1/4 t. salt
2 egg whites
1 large egg
3/4 cup white sugar
8 T. apple sauce (preferably unsweetened)
1 1/2 t. vanilla
1 T. Walnuts (optional)
1. Combine flour, cocoa, and salt; mix well.
2. Whisk together egg whites, egg, sugar, applesauce, and vanilla.
3. Add egg mixture to flour mixture. Mix until blended, but don't overmix.
4. Pour into a greased 8 inch pan
5. Sprinkle with walnuts.
6. Bake at 350 for 25 minutes.
