Yesterday I shared the importance of having a menu plan. But, there are days when you are overcome with exhaustion and you don't feel like preparing whatever is scheduled for the day. For days like these, I have several what I call go to meals. These are easy and quick. We're not super health nuts around here, so my list may repulse you. But, the secret is to develop a list of foods that your family eats that you can have on the table with minimal effort. Just make sure you always have the ingredients on hand for these few meals, and you can cheat every so often! For some ideas, here are a few of mine:
Chicken (or turkey) stirfry (I like to freeze leftover turkey and chicken to have on hand)
Grilled Cheese and Tomato Soup
Breakfast (either eggs or pancakes)
Having a few easy, go to meals on hand at all times helps me keep my head above water.
